1,牛排烹调的生熟度(Degree of Cooking )8 E+ u/ e! }3 u# M! u& w
# {& ?' e- M. T' F/ o4 v牛排的烹调方式有煎(Grill)与烤(Roast)。Grill是烤架的意思,将牛排放在炭火上直接加热叫做煎,把牛排放到烤箱里加热叫做烤(Roast)。% W" ~# T+ S- g0 f( c
以下是介绍煎制牛排的生熟度:

1 ?; G4 k8 x# \* a& z' [ ]( I1 n煎的时间不超过3分钟。外表有烧烤过的痕迹,但是里面还是冷得几乎没有受到热度,切开时还有血水渗出,但是肉质极嫩,口感多汁。

& c0 |5 g( ?, O1 [8 M h煎的时间不超过4分钟。外表有烤焦痕迹,里面肉质呈现原来红色,但入口有热度。切开时还有血水渗出,但是肉质极嫩,口感多汁。

; T2 B6 F# z+ P; D r2 o6 q) Q煎的时间6~8分钟。外表有烧烤过的痕迹,但是里面已经全面加热,可以感受到相当热度,但是肉质还是呈现红色。切开时还有稍许血水渗出,但是肉质嫩,口感多汁。4 ]8 z" G+ |( K w+ } K

二者都有押韵。Surf 是冲浪代表海产、Turf是草地代表牛的饲料;Reef是礁石代表海产。
