牛排的烹调方式有煎(Grill)与烤(Roast)。Grill是烤架的意思,将牛排放在炭火上直接加热叫做煎,把牛排放到烤箱里加热叫做烤(Roast)。

煎的时间不超过3分钟。外表有烧烤过的痕迹,但是里面还是冷得几乎没有受到热度,切开时还有血水渗出,但是肉质极嫩,口感多汁。

煎的时间不超过4分钟。外表有烤焦痕迹,里面肉质呈现原来红色,但入口有热度。切开时还有血水渗出,但是肉质极嫩,口感多汁。

煎的时间6~8分钟。外表有烧烤过的痕迹,但是里面已经全面加热,可以感受到相当热度,但是肉质还是呈现红色。切开时还有稍许血水渗出,但是肉质嫩,口感多汁。5 B8 K3 F4 p, ]: ?% B6 H- }
Medium:稍熟! `2 P4 C5 d+ v
煎的时间8~10分钟。外表烧烤呈深褐色,但是里面除了中间部分呈现粉红色外,外围部分呈现烧烤过的淡褐色。切开时流出褐色肉汁,需要咬上数口才能咽下。1 O: D$ y8 A$ G5 w5 o
Medium Well:稍熟4 N7 r& H1 ?7 n' W: {+ l

# v/ R3 M2 V4 Z0 z2 e# F) t- h马铃薯:Mashed Potato(马铃薯泥)或Baked Potato(烤马铃薯)、French Fries(马铃薯条),三者择一:前食用时可加肉汁调味;后者食用食用刀切开,可以涂上少许牛油(Butter )或食盐调味。9 `, u; n8 l f$ U- t, O
蔬菜:一小节煮过的玉蜀黍(Corn)、数颗绿色花椰菜(Broccoli)、洋葱(Onion)。2 c- L4 A8 n/ D
